I just came back from a 3-4 day work conference in Denver. It was a blast and I’d love to visit again when I have the chance to try a ton of restaurants and Crossfit everyday. I was a bit “aggressive” at the bars 3 nights in a row and I am paying for it now. I spent the first day back at work falling asleep and crossing my eyes at my computer screen. Reeeeeal hot mess.

All in all it was a productive week but I am ready to get back on track and flush all of this alcohol poison out of my body! #BodybyCat I started my weekend with a nice little wod at the gym. We cleaned & jerked and I got pretty sore because I’ve been out of my routine for about a week. I brought my buddy, Hurlwon, to the gym with me & he tried to pick up on the laaaaaydaaays for Valentine’s Day. The cap pushed some of the girls over the edge. He got about 7 phone numbers. But who’s counting?

I followed the workout up with an easy hike at the Lafayette Reservoir with my #GALentine, Shika. Then we had delicious acai bowls & kale/carrot/apple/celery juice at Vitality Bowl in Walnut Creek.

MINT CHOCOLATE GUMMIES

Paleo Catwon Mint Chocolate Gummies

Gelatin is the new bacon in the Paleo-sphere. One of the most nutrient-dense foods you could eat is grass-fed gelatin.

WHAT: a protein derived from collagen, extracted from animal skin, bones and connective tissues

BENEFITS: supports stronger bones, skin & hair; promotes nail growth; improves digestion; supports a healthy gut. Those are just to name a few. I’m no expert in anything so learn more about the health benefits of gelatin here: Chris Kresser – Gelatin.

This recipe is fairly easy. Ya’ll know I refuse to cook/bake anything too complicated. I will give up in the middle of it, curl up into fetal position under the table and rock myself into a deep food coma.

INGREDIENTS 

  • 1 approx. 14 oz can full fat coconut milk (try to find BPA-free & as few additives as possible – I used this brand)
  • 4 tbsp grass-fed gelatin (I used Great Lakes brand)
  • 2 tbsp raw cacao powder (you can use cocoa powder if you’d like)
  • 1 tsp peppermint extract or 4 drops of peppermint essential oil
  • 2 tbsp raw honey (OPTIONAL)

DIRECTIONS

  • Warm coconut milk in medium sauce pan on stove
  • Whisk in cacao powder
  • Whisk in gelatin 1 tbsp at a time – mix well
  • Remove from heat
  • Add peppermint & honey if you’d like, stir
  • Pour into gelatin molds (I used this one: Wilton Silicone Brownie Squares Baking Mold)
  • Set mold on baking sheet or or flat surface for easy transport & refrigerate for 2 hours

These were pretty simple to make and def help to satisfy that little sweet tooth kick in the ass for chocolate I get every once in a while all day, every day, all the times, all my life, forever and always.
